Lucky Charm Pancakes

Happy St. Patricks Day friends!! Last night I tried being creative and making some green Rice Krispie treats, but for some reason they turned out this ugly brown color, poop brown to be exact. It was a Pinterest fail if I’ve ever seen one.

Well I gave this holiday another shot this morning (I am Irish after all!) and made some festive green pancakes with homemade whipped cream! The lucky charms marshmallows were a perfect touch and added some extra sweetness. stpattyday2

So toss aside your green eggs and ham and try out this recipe! Trust me it’ll be a hit and it’s fail proof ūüėČ

INGREDIENTS

For the Pancake:

  • 1 cup milk
  • 2 tbsp white vinegar
  • 1 1/4 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 1 egg
  • 1/2 tsp vanilla
  • pastel green food coloring

For the Whipped Cream:

  • 1/2 cup¬†heavy whipping cream
  • 1 tbsp sugar

DIRECTIONS

  1. In a small bowl combine milk and vinegar. Set aside and let sit for a few minutes.
  2. In a large bowl combine flour, sugar, baking powder, baking soda and salt.
  3. Whisk together butter, egg and vanilla into the milk mixture. Add the food coloring.
  4. Combine with flour mixture and stir until smooth.
  5. Add butter to pan and pour 1/4 cup batter. Let cook on one side until bubbles begin to pop, then flip to the other side. Cook until barely golden brown.
  6. Place a mixer bowl and whisk in freezer for at least 20 minutes to chill.
  7. Pour heavy whipping cream and sugar into the cold bowl and whisk on high speed until medium to stiff peaks form, about 1 minute. Be sure not to over whisk.
  8. Add as many Lucky Charms marshmallows as desired!

Minny’s Famous Chocolate Pie

If you’ve read the book or seen the movie, The Help then you know about Minny’s famous chocolate pie that everyone loves. Of course I’m talking about the version without her shit in it.¬†I’m not much of a pie maker, but since it is National Pi Day I decided to give it a whirl!

The recipe I found is super simple, and while my pie didn’t turn out as pretty as I had hoped, it sure did end up being delicious! I also forgot to get the ingredients for whipped cream so we enjoyed it without, but it honestly didn’t need it. This fudgy pie was a huge hit and it’s creamy¬†filling made it easy to enjoy without whipped cream!

If you feel like trying it out here’s the recipe…you won’t regret it!

Ingredients:

  • 1 packaged pie crust (I used Pillsbury) or you can make from scratch
  • 1¬Ĺ cups granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs, beaten
  • ¬ĺ cup evaporated milk
  • 1 teaspoon pure vanilla extract
  • ¬ľ teaspoon salt
  • whipped cream to serve.

1. Preheat oven to 350 degrees. Ease the dough into the pie plate and gently fold the extra dough over and pinch the edges decoratively.

2. In a large mixing bowl whisk together the sugar, cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.

3. Pour the filling into the pie crust and bake for 45 minutes, or until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil 15 minutes into baking to prevent over-browning.

4. Cool the pie on a rack before cutting. Serve with whipped cream if desired.
