Lucky Charm Pancakes

Happy St. Patricks Day friends!! Last night I tried being creative and making some green Rice Krispie treats, but for some reason they turned out this ugly brown color, poop brown to be exact. It was a Pinterest fail if I’ve ever seen one.

Well I gave this holiday another shot this morning (I am Irish after all!) and made some festive green pancakes with homemade whipped cream! The lucky charms marshmallows were a perfect touch and added some extra sweetness. stpattyday2

So toss aside your green eggs and ham and try out this recipe! Trust me it’ll be a hit and it’s fail proof ūüėČ

INGREDIENTS

For the Pancake:

  • 1 cup milk
  • 2 tbsp white vinegar
  • 1 1/4 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 1 egg
  • 1/2 tsp vanilla
  • pastel green food coloring

For the Whipped Cream:

  • 1/2 cup¬†heavy whipping cream
  • 1 tbsp sugar

DIRECTIONS

  1. In a small bowl combine milk and vinegar. Set aside and let sit for a few minutes.
  2. In a large bowl combine flour, sugar, baking powder, baking soda and salt.
  3. Whisk together butter, egg and vanilla into the milk mixture. Add the food coloring.
  4. Combine with flour mixture and stir until smooth.
  5. Add butter to pan and pour 1/4 cup batter. Let cook on one side until bubbles begin to pop, then flip to the other side. Cook until barely golden brown.
  6. Place a mixer bowl and whisk in freezer for at least 20 minutes to chill.
  7. Pour heavy whipping cream and sugar into the cold bowl and whisk on high speed until medium to stiff peaks form, about 1 minute. Be sure not to over whisk.
  8. Add as many Lucky Charms marshmallows as desired!

French Lemon Yogurt Cake

We are currently sitting in the waiting room at the Cleveland Clinic anxiously waiting for my sister to have her baby,¬†so I thought this was a pretty good time to right this post. My sister and brother-in-law¬†read the¬†book,¬†Bringing up B√©b√© by Pamela Druckerman¬†during her pregnancy. It’s all about her life as an American mom in France and how well behaved the French children are.

Druckermann talks about how the children in France bake almost every weekend, which teaches them patience and structure. There is a yogurt cake that most French children are taught to bake and her friend’s 3 year old daughter can bake the cake all by herself.

My sister had made the yogurt cake from the book, but didn’t like it very much so found¬†a similar¬†recipe. We made this¬†French lemon yogurt cake and it was absolutely amazing. I normally like rich desserts with chocolate and peanut butter, but this French cake is now in my top 5. It’s perfectly¬†light and sweet. We enjoyed a slice that night and another¬†with tea the next morning! It was so delicious I had to share the recipe with you all. We found this recipe online but changed a few things to make it a little healthier and our own!

French Lemon Yogurt Cake

INGREDIENTS:
  • ¬Ĺ cup plain yogurt or Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ¬Ĺ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¬Ĺ teaspoon salt
  • 1/2 teaspoon vanilla
  • grated lemon zest, from 1 medium-size lemon
  • ¬Ĺ cup¬†coconut oil
  • ¬ľ cup fresh lemon juice
  • ¬ĺ cup (1¬Ĺ jars) of powdered sugar

INSTRUCTIONS:

-Preheat oven to 350ňöF. Spray a 9-inch round cake pan with baking spray and line bottom of pan with parchment paper and spray parchment paper lightly. Set aside.
-In a large bowl, combine yogurt, sugar, and eggs until well blended.
-Next add flour, baking powder, salt and zest. Mix until just combined.
-Add the oil and vanilla and stir well. Keep stirring until smooth, may take a little while.
-Bake for 30-40 minutes, until a toothpick inserted in the center comes out clean.
-Cool cake on a wire rack for 10 minutes; then flip out of pan onto the rack.
-For the icing, combine the lemon juice and powdered sugar in a small bowl and stir until smooth. With a pastry brush, gently brush the all of the glaze onto the cake.  Some of it will drip off, but most of it will soak in. Allow cake to cool completely.                                        -Sprinkle with powdered sugar and serve.

Best Donuts in Nashville

My friend and I took a quick trip to Nashville over NYE weekend and the majority of our time was spent eating. Whether it was barbecue, tacos, or late night drunchies, our trip pretty much revolved around what our next meal would be!

I had heard so many great things about Five Daughters Bakery in Nashville that I had to check it out for myself. It was so delicious, I had to go back a second time before we headed home. My favorite donut was the simple vanilla sugar and my friend Jamie loved the vanilla cream!

Nothing is sweeter than family!

While the donuts were amazing, I also loved the story behind the bakery. The bakery is owned and operated by a young couple and their five daughters. The husband just so happens to be a third generation baker (hence the friggin delicious donuts)! The bakery is bright and colorful and when you walk in it just feels super homey. There are family pictures on the walls, as well as adorable signs and decorations. They even had a christmas tree up in the front room!

They also are a company that values giving back! In the front of their shop they were selling a few goodies and had a bunch of information on an organization called Given Ministries. Given works to rescue children and their families from trafficking and slavery around the world. Their mission is to rescue, restore, and reentry. Not only do they remove people physically from these enslaved situations but they offer rehabilitation to restore their emotional health as well. Lastly, they work on reentry, to give these people the necessary skills to form a career so they never have to look back. California Donuts

When I was little, I used to wake up really early on the weekends. ¬†I would wake up early for one incredibly special reason – so my¬†dad could¬†take me to get donuts for our family. I remember feeling so special for two reasons: 1) I got to pick out everyone’s donuts, and 2) I got to do it with my dad. Carrying that big pink box home gave me this huge feeling of satisfaction; a feeling that I still get to this day. Since moving to LA I’ve been trying to find a donut shop that brings me as much joy as my favorite shop from home. I’ve tried quite a few donut shops, let me tell ya, but none of them compare. I have, however, fallen in love with California Donuts.

While California Donuts may not give you that big pink box, you always leave with a smile. Their donuts are so cute and colorful making it almost impossible to eat… almost. They range from your average glazed donuts to donuts with lucky charms on them! My personal favorite was the little panda face donut. It took me about an hour to finally take a bite, but it tasted just as good as it looked.

Best coffee shops to get work done

Cafecito Organico

It seems like everyone is always on the move in LA. If you’ve ever tried to sit and actually get work done in a Starbucks it’s nearly impossible (although this may just be a personal problem). People are always popping in and out of coffee shops and it can be a little distracting.

A friend told me about this hip little outdoor coffee shop in Silverlake called Cafecito Organico. I checked it out for myself in my ridiculously chunky and comfy sweater and not only is this place absolutely adorable, but it is the chillest coffee shop I have ever been to. You could sit there for hours and not get distracted at all. I should also mention their cappuccinos are seriously delicious and (not that it really matters to me) but they have gluten free and vegan goodies as well!

I spent my time at the cafe reading and jotting down positive thoughts and quotes in my notebook. This is something I do often just to give myself a little positive reminder or inspiration. One of my favorite quotes by Mark Twain is, “kindness is a language that the deaf can hear and the blind can see.” I think we often get caught up in our own little worlds and forget how easy it is to be kind to people. Seriously, even an oz. of kindness can go long way!
